I've got a lot to finish up this week, so instead of a deep and meaningful blog ('cause we all know I'm really good at those), I thought I'd leave you with one of my favourite Fall recipes, since I was doing some baking this weekend.
I hope you like cranberry muffins. (And stop by the Vauxhall Vixens tomorrow because we'll be sharing more recipes and I'll have another one for you)
Cranberry Muffins
1½ cups of flour
3 tsp baking powder
¼ tsp salt
¼ cup sugar
¼ cup vegetable oil
1 egg (beaten)
1 cup orange juice
1 tblsp orange zest
1½ cups cranberries
Coarse sugar to taste
Preheat oven to 400 degrees F. Grease and flour a muffin tin.
Sift flour, salt and baking powder together. Beat oil and sugar. Add egg and beat until smooth. Add orange juice and zest. Add flour mixture and stir only until mixed. Fold in cranberries. Spoon into muffin tins. Sprinkle some coarse sugar on top. Bake for 20-25 minutes.

I broke down and made more...can smell them in the oven now. Yum!
Those look great! I've never been a fan of cranberries(not the fruit or the singing group:)). But I think I'll give these a try.
